My super salad these days has between 14 and 20 different vegetables: lettuce, arugula, spinach, and for the cabbage-kohlrabi-celery-purple carrot-cauliflower, I chop them finely in a food processor. Then I add: red pepper-yellow zucchini-celery-cucumber-tomato-avocado and sprouts. (You can add pumpkin or roasted kale, delicious!)
My sauce: olive oil, Damari (or Bragg or tamari), Umeboshi (or lemon juice), honey and Redstar nutritional yeast (I like the Artisan brand for the vitamin B12 content), a great condiment for veggies (it has half its weight in protein, is low in sodium, has a great nutty flavor & is reminiscent of cheese).
Vegan Parmesan, in a food processor: cashew nuts, nutritional yeast and Herbamare.
Add some crushed walnuts for brain health and enjoy!
