Taking great care...

1. In a shot glass, pour the already prepared mixture (ginger and lemon, bergamot):

  • 1 tsp fresh ginger
  • ¼ lemon, squeezed
  • 1 dash of honey
  • 1 drop of bergamot oil

2. Same recipe with hot water to make a herbal tea. Delicious!

Gourmet pleasures

1. Chocolate recipe:

  • ½ cup cocoa butter
  • 1/4 cup coconut oil
  • 1 cup firmly packed cocoa powder (be careful to start with 3/4 cup, not all cocoa powders have the same density)
  • 1/4 cup maple syrup
  • 1 tsp natural, alcohol-free vanilla extract
  • 1 pinch of sea salt
  1. Melt the cocoa butter and coconut oil in a bain-marie, in a dehydrator, or using the simmer function on a gas stove. Once melted, place the mixture in a food processor.
  2. Add the remaining ingredients (except the cocoa powder) and stir until smooth.
  3. Add a third of the cocoa powder and stir in bursts (“Pulse” button).
  4. The goal here is to prevent lumps of cocoa powder from forming (undermixed) and also to prevent the cocoa butter from cooling and the chocolate mixture from clumping (overmixed).
  5. Add the remaining cocoa powder in 2 batches and stir for a few moments to obtain a silky texture. Pour into silicone chocolate molds quickly. The mixture should not cool. Refrigerate for a few hours before serving. I add crushed pine nuts, pistachios, walnuts and orange blossom water, rose water and honey (I don't have the quantities). I incorporate the nuts by hand just before pouring into the molds.
  6. You can play with the flavors: adding orange peel, ginger etc.
  7. We added 1 tbsp of the Complete

2. Energy Balls (with The Complete)

  • 2 cups of dates
  • 1 cup apricots
  • ¾ cup prunes (optional)
  • 4 tbsp coconut butter
  • 4 tbsp cocoa
  • 2 tbsp maca
  • 2 tbsp carob
  • 1 tbsp maple syrup
  • 4 tbsp cherry juice
  • 2 tbsp of Wholemeal
  • 1 cup shredded coconut
  • Place everything in a food processor. The texture will be very creamy, you can then adjust to taste; add more coconut or cocoa butter.

3. Maple sugar and cherry juice candies

1 cup fine maple sugar

4 tsp cherry juice

Add 1 tsp of cherry juice at a time and mix well with the sugar to obtain a moist texture. Pack well in a chocolate mold, use a spatula to remove the excess and unmold immediately.

Makes about 30 small candies.
