A jmagazine subscriber wrote this following the article on the gut, inflammatory diseases and mental health : "It really freaks me out, though, when people say it might be unwise to remove gluten and dairy. It just proves how little we know these days about how the human body works."

I answered the following because people really need to understand that removing gluten is a decision that is beneficial when the food choices that come with it make sense . Otherwise, we have to be careful because we are bombarded with very bad foods by the food industry. So here is my response to all this controversy surrounding the warnings around "gluten-free":

The notion of "recklessness" in removing gluten and dairy products comes from warnings that sometimes make sense but are never completely explicit. Let me explain: it is reckless to remove gluten and turn to what a large majority of the industry offers as an alternative. Indeed, turning to highly refined inputs, mostly white rice, corn starch, potato starch, can in no way be beneficial to health. On the contrary, the consumption of these foods, in the long term, unbalances blood sugar and increases the risk of developing type 2 diabetes or even cardiovascular disease. So, the "poorly explained" warnings certainly want to speak to this reality.

The problem is that we never follow through with the explanations. Everything comes down to education and awareness. There's no harm in choosing foods that don't contain gluten and are highly nutritious. You have to make the right choices, and for that, of course, read the ingredients carefully! And on the contrary, by choosing a variety of grains, including quinoa, buckwheat, and amaranth, we gain nutritional value and discover new tastes! And if we also see improvements in our health, we're a double winner!
