During a meeting with Josée and Stéphane, we discovered water kefir with pleasure and interest. And now Josée generously shares her recipe, her tips, and the steps to prepare it in a video!
"Here's a video explaining how to make water kefir. It's very simple and so delicious. I've also written you my recipe in a few lines: like everything else, there are several ways to do it.
I take a jar without a lid and put a cotton cloth with an elastic band inside to let the air through but not the little bugs.
6 tbsp water kefir grains
6 tbsp white sugar
3 slices of organic lemon without peel
3 dried figs
In 3 liters of water
Otherwise for 1 liter of water it is:
2 tbsp water kefir
2 tbsp sugar
1 organic dried fig important
1 slice of organic important
Ferment for 24 hours in the jar with a cotton net and elastic around the opening.
Then put into squeeze bottles and flavor to your taste.
I like to add ginger, young balsam fir shoots from spring, and sometimes I add dried organic rosemary. Whatever you like to enhance the drink.
For the 2nd fermentation, let it rest for another 24 hours in summer and up to 48 hours in winter.
When degassing, you have to be careful!
In summer, during the second fermentation, it is better to degas more often.
Afterwards, we put it in the refrigerator and the fermentation stops or almost stops. It always continues a little, even in the refrigerator, unlike Kombucha.
