Concerning medicinal plants, here is a good point from Geneviève Maillé: when they are in leaves (for example: catnip, nettle, willow, mint, chamomile etc.) it is more appropriate for them not to be simmered because they will then lose all their active ingredients. It is enough simply to infuse them for about fifteen minutes in hot water, all covered to preserve their natural essential oils :) As for roots, barks and seeds, (licorice, marshmallow, star anise, fenugreek, ginger etc.) it is indeed preferable to let them simmer to extract all their benefits :)
