VEGAN PAD THAI

VEGAN PAD THAI
1 English cucumber cut in ribbons
3 tablespoons cider vinegar
Juice of 1 lemon
1 tablespoon tamarind sauce
1 package (8 oz.) pad thai rice noodles
1 handful of basil
1 handful cilantro
Peanut sauce (recipe below)
½ cup sauerkraut
2 teaspoons hemp seeds
To make cucumber ribbons:
With a vegetable peeler, peel long, thin slices of cucumber lengthwise. Put the ribbons in a bowl and add the cider vinegar, lemon juice and tamarind sauce. Reserve.
Cook the rice noodles following the instructions on the package. Rinse and drain well.
Thinly chop the basil and cilantro. Keep a few leaves whole to garnish.
In a large platter, add the noodles. Pour the peanut sauce. Add the cucumber ribbons and the sauerkraut. 
Garnish with basil, cilantro and hemp seeds. Enjoy!!!!!
