Parsley Smoothie

For two portions (or 1 generous serving)

  • 2 C pineapple chunks
  • 2 C fresh parsley
  • 1 T water


This is what I learned from Danièle Starenkyi’s  book on “The Happiness of Vegetarian Eating”, which was the inspiration for this recipe!

1 Tbsp of fresh cut parsley is rich in antioxydants, chlorophyll and provides:

  • 8mg calcium
  • 0.2mg iron
  • 340IU Vitamin A
  • 7mg Vitamin C

Romans gladiators used this superherb to increase their strength!

What’s more, you can grow this powerhouse all year round in pots.
