MASON JAR LIME PIES

MASON JAR LIME PIES

Crust:

  • 1 cup walnuts
  • 1 cup unsweetened shredded coconut
  • 2 tbsp of date puree (to make the puree, cover 1 cup of dates with water, soak dates for 4 hours, keep the water and mix in a food processor)
  • 1/2 tsp vanilla
  • pinch of salt

Filling:

  • 11/2 avocado
  • 1/4 cup coconut oil
  • 1/2 cup coconut butter
  • 1/2 cup maple syrup
  • 1/2 cup lime juice or lemon juice (fresh if possible)

Grind the nuts in a food processor until desired texture and add all the other ingredients.

Spread the crust into mason jars or pie plate.

Melt the coconut butter and coconut oil in a water bath. Remove from heat and pour in a blender with all the other ingredients. Blend until smooth.

Pour on top of crust. Refrigerate. Enjoy and make sure you make enough!!!
