Karine’s Protein-Rich, Vitamin-Dense, Vibrant Salad

  • 1 C fresh coriander or Italian parsley
  • 3 C red or white quinoa, brown rice, millet, red lentils
  • lime juice
  • ½ C dried sulphite free abricot
  • olive oil to taste
  • ½ C chopped almonds or nuts of choice
  • 1-2 celery stalks, chopped
  • ½ red onion chopped
  • ½ C cooked corn
  • 1 red pepper
