HEALTHY GOURMET CROQUETTES (vegan, gluten-free, detox)

  • 1/2 onion
  • 2 garlic cloves (minced)
  • 2 cups butternut squash peeled, grated
  • 1/2 cup rice flour (you could use buckwheat or almond flour, I used pumpkin protein powder)
  • 2 tbsp nutritional yeast
  • 1 tbsp chia seeds in 1/4 cup water (set aside, it will turn into a gelatinous texture, equivalent of 1 egg)
  • 2 tbsp fresh cilantro
  • olive oil
  • paprika
  • nutmeg

Preheat oven to 400° F.

In a pan, add olive oil, and sauté the onion and garlic until transluscent. Meanwhile, peel and grate the squash and put in a bowl with the onion, garlic and all the other ingredients. Shape into croquettes and place on on a baking sheet lined with parchment paper.

Bake 10 minutes, turn over and cook for an additional 10 minutes.

Serve with almond or tahini sauce.

Goes well with tortillas or in salad (avocado salad for instance). Or even cold, dipped in hummus!
