Charles’ Oatmeal Cookies (gluten-free, dairy-free, eggless)

Charles’ Oatmeal Cookies (gluten-free, dairy-free, eggless)
  • ½ cup coconut sugar (for a healthier option try 1 crushed banana with 1/4 cup coconut sugar)
  • ½ cup coconut oil (I let it melt in the oven for better results)
  • 2 tbsp of chia seeds (mixed with ½ cup of water)
  • 1/2 tsp vanilla extract
  • 1 cup quinoa flour - You can use almond meal for more protein or your own gluten-free mix. In the past, I have used cereal or even baby cereal.
  • 1 cup gluten-free oatmeal or quinoa flakes
  • 1/2 tsp baking powder (aluminum-free)
  • 1 tsp baking soda (aluminum-free)
  • Optional: 2 tsp sprouted ground flax

Amelie’s Version (no oil, sugar-free):

Replace the coconut oil and sugar with ½ cup sugar-free applesauce and 1 ½ banana.

For this particular version, I divided my flour mix as follows: 1/3 brown rice flour, 1/3 buckwheat flour and 1/3 coconut flour (add 1/3 cup of almond milk if too thick). Halfway through the baking process, I brushed the tops of the cookies with 2 tbsp of honey.

Preheat oven to 350° F.

In a bowl, mix together the coconut sugar, the melted coconut oil, the chia seeds and the vanilla.

Then, add the flour, gluten-free oatmeal (or quinoa flakes), baking powder and baking soda.

Optional: you can add sprouted ground flax. Mix until well combined.
