Nutritious, Protein-Rich,
Gluten-Free, Egg-Free and Lactose-Free Bread

Preparation: 8 minutes, doesn’t
require a bread-maker!

Ingredients:

* 1 1/2 C Hot (not
boiling) Water

* 2 Tbsp Maple Syrup (or
honey, sweeten to taste, add cinnamon too…)

* 1 Tbsp Redstar
Nutritional Yeast (Use traditional yeast if you want the bread to rise more –
like the loaf shown in the right of the photo. The bread made with nutritional
yeast is the one on the left)

* 3 C Gluten-Free Flour

* 3 Tbsp Ground Flaxseed
(I use a 50/50 mix made with ground chia seeds, it's up to you)

* 1 Tbsp Xanthan Gum

* 1 Tbsp Baking Powder
(gluten-free and aluminum-free)

* 2 Tbsp Olive Oil

* 1 1/2 tsp Apple Cider Vinegar

* 4 Tbsp Applesauce

Directions:

Add the honey and nutritional
yeast to 1/4 C of warm water and let sit.

In another bowl, mix
flour, ground flax seed, xanthan gum and baking powder.

In a third bowl, mix
olive oil, apple cider vinegar and applesauce.

First, mix the liquids
together. Then, make a well in the flour mixture and add the wet ingredients to
the dry ingredients.

Before mixing, add the
rest of the warm water (1 1/4 cups).

Then mix with positive
thoughts and love.

Turn on your oven to the
lowest temperature allowed.

Oil the bottom of your
cake pan and then line with parchment paper.

Pour the dough into the pan
and bake with the door open (I wedge a wooden spoon between the door and the
oven)

After an hour, remove the
bread from the oven.

Increase oven temperature
to 400 degrees and bake the bread for 30 minutes.

Yum!!!  This is a perfect snack for children, and
with a drizzle of maple syrup makes a great little dessert! It also pairs
perfectly with your meals, freezes well and can easily be used to make gluten-free
breadcrumbs.
